"This book, The Flavonoids: Extraction and Applications, describes the recent advances of polyphenol (flavonoids) derivatives for human health and in the management and prevention of diseases. They have been ascribed positive effects on human and animal health and been employed for disease therapy and chemoprevention. In this volume, the biochemistry and applications of flavonoids are explored-their proven and potential pharmacological health benefits are explored.
